做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞(lāo )出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。 -
