做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一(yī )小块姜,热锅,用姜块在锅上擦一遍(biàn ),放(fàng )两勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转(zhuǎn )中小火煲一(yī )个半小时,下盐(yán )调味即可品尝。 -
