做法(fǎ ):洗净宰(zǎi )好鲫鱼(yú ),洗(xǐ )净淮山和薏(yì )米。用清(qīng )水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其(qí )他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。 -
